Kicking off our Memorial Day blog series with some easy and delicious chocolate covered strawberries! I said easy, however, I rode the struggle bus HARD while I was trying to make these for this post. My parents have been on a huge dark chocolate covered strawberries kick lately. They’re quick and easy, my mom is a sucker for chocolate, and my dad LOVES dark chocolate and having sweets around 😉 One night I helped my mom make a quick batch. So when I went to make these, I thought I knew how to make them. Well, I apparently wasn’t paying attention when she mixed in the vegetable oil… so the first round I didn’t add any oil (failure #1). After getting very frustrated (lol whoops) and trying to pinpoint what went wrong, we realized I had skipped one of the 3 very simple ingredients. Just wait, it gets better. This past weekend when my family was up here at the lake, my mom and I thought we’d quickly make them again! This time, with vegetable oil. We had a little bit left here at the lake, perfect! All we need is a tablespoon, right? 😉 Do the smell test people. After mixing the oil in with the chocolate chips and microwaving, we realized something was a little off. The mixture wasn’t mixing smoothly and smelled weird. We still dipped some strawberries in it because the guys will eat anything HA! But yeah, we definitely used bad vegetable oil (failure #2). The best part? We literally went to the grocery store right before we made these.. why didn’t we just get more vegetable oil? Only God knows.
Third times a charm! 😉 When we went to fill the boat up with gas before putting it in the water, my mom ran into Casey’s and luckily found some vegetable oil. When we got home we FINALLY were able to successfully make some white chocolate covered strawberries. Red strawberries + white chocolate + blue sprinkles = perfect treat for Memorial Day! I didn’t calculate the nutritional value for these because by that point I just wanted to get these dang things done with! But for the most part, this is a perfect “healthier” snack to make for the weekend! And if you want, you can do dark chocolate instead, because like my dad says, “since it’s dark chocolate it’s practically healthy right?!”.
I don’t have pictures of the “process” of making these, just the final product! I was trying to take them and everyone just wanted to eat them! The recipe is below, only 3 ingredients 😉 I promise this is actually a really simple recipe LOL.
Chocolate Covered Strawberries
- 1 cup white chocolate chips
- 1 T vegetable oil
- 1 package strawberries
- Optional: sprinkles
- In a medium bowl, combine chocolate chips and vegetable oil.
- Microwave for 45 seconds. Stir until mixture is smooth.
- Set out a large cookie/baking sheet. Cover with wax paper.
- Holding the stems, dip strawberries in chocolate and place on baking sheet. Add sprinkles if desired.
- Refrigerate until chocolate has hardened.
