My first breakfast recipe!! I don’t know about you, but I could eat breakfast food all day. It’s the best! And there are so many different options… eggs, oatmeal, omelets, pancakes, waffles, cereal, smoothies, and FRENCH TOAST!! The list goes on, but you get the point. Breakfast food is the best! Which is why me and Dylan’s go-to on a Saturday morning is always Village Inn 🙂
However, meals at places like Village Inn, Perkins, and IHOP are usually pretty calorie dense. FYI: Just the french toast at Village Inn has 540 calories, 22g of fat, 65g of carbs, and 22g of protein; and we all know you don’t ever get ONLY the french toast LOL. So this is why I wanted to create a very simple, yummy, and lower calorie version of one of my favorite breakfast foods! Did I mention that this recipe is also packed with 15g of protein?! And only 20g carbs and 7g fat? Yeah, you can’t really beat the macros on this recipe! And with it being only 214 calories you can easily pair it with something else for a larger and more complete meal if you want! Or you can also have it as a snack, which who wouldn’t want to have French Toast as a snack?! I definitely would. And to be honest, I’m probably going to make this for part of my supper tonight because it sounds SOOO good! I couldn’t decide what I wanted to have and I’m currently thanking myself for picking up bread at the grocery store this morning. 🙂 So let’s get to how you can make this yummy recipe for yourself the next time you’re craving some Village Inn, but don’t want to waste hundreds of calories on it, LOL.
First off, here are the exact ingredients I used. I typically use the Sara Lee 45 calorie wheat bread, but today at Walmart I found 45 calorie Italian bread by Village Hearth. It has pretty much the same nutritional information and I personally think the slices are a little bit bigger and fluffier/thicker! So I’m excited to try this recipe out with that bread tonight 🙂
*UPDATE – I just finished my french toast for supper, using the Village Hearth bread, and it was amazing!!! The picture at the top of the page is what I had tonight 🙂
I apologize for the bad lighting in some of these photos, the lighting in my parent’s kitchen was not my friend on this day, haha!
STEP 1: In a medium-sized mixing bowl, mix together the egg and almond milk. Be sure to really beat the egg and get it into a nice smooth and consistent mixture so that when you dip the bread you don’t have clumps of egg.
STEP 2: Add your cinnamon, and mix it all together! If you’re not a cinnamon fan, you can leave this out. But I think it adds the perfect flavor for a warm yummy breakfast 🙂
STEP 3: Dip your slices of bread into the mixture! 3 slices worked perfectly for this amount. So if you’re wanting more or less bread, adjust accordingly.
STEP 4: Cook your slices of bread on an electric griddle at 400°F for 1-2 minutes and then flip and cook the other side. If you don’t have an electric griddle at home, doing it in a pan on the stove top would work just fine! Just might have to do them 1-2 at a time instead.
UPDATE: I included a picture above of making them on the stove top instead! I do this all the time in Ames since I don’t have an electric griddle and it works great! (better picture quality too LOL)
And then you’re done! Pretty easy right? You’ll eat them faster than it took to make them, I promise 🙂 I topped mine with just some sugar-free syrup and they were perfect! You could also top it with some fruit like strawberries or bananas, which I’m thinking of doing tonight!

- 3 slices 45 calorie bread
- 1 egg
- 1/4 cup unsweetened almond milk
- 1/2 tsp. cinnamon
- In a medium bowl, mix together the egg and almond milk until you’ve reached a consistent mixture.
- Add cinnamon and mix.
- Dip bread in mixture, covering entire slice. Cook on an electric griddle at 400°F until done; about 1-2 minutes. Flip bread and cook the other side until done.
