The weather is starting to get a lot colder, which is definitely putting me in the mood for warm comfort food, like pasta!! I have been wanting to try out chickpea noodles and this was the perfect recipe for it! I’ve also been really wanting to incorporate sausage into a recipe to mix things up a little bit from my normal routine, and it worked perfectly! They are packed with protein, and super tasty too! This recipe is SUPER simple, with only four main ingredients (not including spices).

I personally meal prepped this for my week’s lunches (which is how I pretty much make everything LOL), so I split it up into five servings. But you can easily whip it up for supper for your family or increase the amount of sausage/pasta as needed! So let’s get to it!

Here are the specific ingredients that I personally used: (all from Walmart)

  • Fresh Spinach
  • Hunt’s Diced Tomatoes (no salt added)
  • Butterball Turkey Sausage
  • Banza Chickpea Spaghetti Noodles (there are many different types of noodles (like penne etc. so you can use whichever style you want!)


STEP 1: Start cooking your noodles in a pot of boiling water on the stove.

STEP 2: Cut up turkey sausage into the desired side of pieces.

STEP 3: Add sausage to large skillet and begin cooking on medium-high heat. Then add spinach and diced tomatoes to skillet. I would recommend adding a little bit of spinach at a time, as it will be a lot of volume at first but will cook down in size. Mix everything together and add seasonings to taste, I used Mrs. Dash Tomato Basil Garlic which was a perfect combination of everything I wanted in this recipe! I love Mrs. Dash seasonings because have no salt, and have so many great “combination flavors” that work with all of my recipes! I am not a fan of having to use 5-10 different seasonings for a single recipe, so these are perfect! This is a great starter bundle of four very versatile seasonings: Mrs. Dash 4 Flavor Pack.


STEP 4: Drain your noodles and add to large skillet. I would recommend waiting to drain the water out until right before you add them to the large skillet so that they don’t get too sticky and clump together.


Mix it all together, add more seasonings if desired, and you’re good to go! 🙂


Once I completed making this recipe, I simply just divided it out into five containers. I personally use a food scale to make sure they’re all the same amount, but if you’re not tracking your food you can easily eyeball it!


TOTAL = $7.70 total / 5 servings = $1.54 per serving (I shop at Walmart)

Less than $8 for 5 meals! I’d say that’s a pretty good deal 🙂

Turkey Sausage Spinach Spaghetti

  • 1 package of turkey sausage
  • 1 bag of spinach
  • 1 can of diced tomatoes
  • 1 box of chickpea noodles


  1. Cook pasta as directed.
  2. Cut up sausage into desired sized pieces and add to large skillet on medium-high heat.
  3. Add spinach and diced tomatoes to large skillet and mix everything together.
  4. Drain cooked noodles and add to large skillet. Mix all ingredients together until cooked. Add desired seasonings.
